Homemade Roasted Red Pepper Hummus

Bell Pepper Muffins with Hummus (AC250-2)
Bell Pepper Muffins with Hummus
12 mini muffins
4 tablespoons butter or ghee
1 roasted red bell pepper (3/4 cup red bell pepper, roasted)
1/2 cup wheat flour
1/4 cup oat flour
1/4 cup chopped almonds
1 teaspoon baking powder
2 eggs
¼ cup of ricotta cheese (60 grams)
1 teaspoon salt
1/4 teaspoon pepper
Filling:
12 tablespoons hummus
1. Mix cold butter and flour in a food processor for 20 seconds.
2. Add remaining ingredients and process for 20 seconds more.
3. Pour into a buttered and flowered mini muffin pan.
4. Bake at 425F for 18 to 20 minutes and serve cut in half with hummus in the center.
